BBQ Chicken Drumsticks with Roasted Potatoes

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper or aluminum foil.
  2. Place drumsticks on the lined baking sheet. Pour BBQ sauce over the chicken and toss to coat evenly. Bake for 35-40 minutes, until internal temperature is 165°F.
  3. Meanwhile, in a large bowl, combine garlic cubes, olive oil, rosemary, salt, and pepper. Whisk until combined, then add potatoes and toss to coat evenly.
  4. Spread potatoes evenly on a lined baking sheet. Roast in the oven for 20 minutes, until just tender.
  5. Toss the salad kit and serve alongside the drumsticks and potatoes.
