BBQ Chicken Drumsticks with Roasted Potatoes

BBQ chicken drumsticks coated in sauce and roasted, served alongside garlic rosemary potatoes and a salad kit.
Ingredients
Produce
- 2 lbs baby potatoes, halved
- 1 Tbsp fresh rosemary, finely chopped
- 1 salad kit of choice
Meat & Seafood
- 2 (6-ct) packages chicken drumsticks
Frozen
- 4 frozen garlic cubes
Pantry / Dry Goods
- 3 Tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp pepper
Sauces & Condiments
- 1/2 (19-oz) bottle BBQ sauce
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper or aluminum foil.
- Place drumsticks on the lined baking sheet. Pour BBQ sauce over the chicken and toss to coat evenly. Bake for 35-40 minutes, until internal temperature is 165°F.
- Meanwhile, in a large bowl, combine garlic cubes, olive oil, rosemary, salt, and pepper. Whisk until combined, then add potatoes and toss to coat evenly.
- Spread potatoes evenly on a lined baking sheet. Roast in the oven for 20 minutes, until just tender.
- Toss the salad kit and serve alongside the drumsticks and potatoes.
