One-Pot Chicken Broccoli Rice Casserole

A comforting one-pot dish with chicken, rice, broccoli, and melted cheddar cheese.
Ingredients
Meat & Seafood
- 1 1/2 lbs chicken breast, cut into pieces
Produce
- 1/2 onion, diced
- 1 (16-oz) bag broccoli florets
Dairy & Eggs
- 2 cups shredded sharp cheddar cheese
Frozen
- 2 frozen garlic cubes
Pantry / Dry Goods
- 3 Tbsp extra virgin olive oil
- 1 cup uncooked jasmine rice
- 3 cups chicken broth
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Heat the oil in a large skillet/Dutch oven over medium-high heat. Add the onion and garlic cubes. Saute for 3-4 minutes.
- Add the chicken and cook until browned, about 4 more minutes. Push the chicken to one side of the pan and add the rice. Cook for 3 minutes, until toasted.
- Add the chicken broth, salt, and pepper and stir to combine. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
- Stir in the broccoli florets, then cover and simmer for an additional 10 minutes.
- Stir in 1 cup of cheese and top with remaining cheese. Cover and let simmer 2-3 more minutes until the cheese is melted.
