One-Pot Chicken Broccoli Rice Casserole

Instructions

  1. Heat the oil in a large skillet/Dutch oven over medium-high heat. Add the onion and garlic cubes. Saute for 3-4 minutes.
  2. Add the chicken and cook until browned, about 4 more minutes. Push the chicken to one side of the pan and add the rice. Cook for 3 minutes, until toasted.
  3. Add the chicken broth, salt, and pepper and stir to combine. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
  4. Stir in the broccoli florets, then cover and simmer for an additional 10 minutes.
  5. Stir in 1 cup of cheese and top with remaining cheese. Cover and let simmer 2-3 more minutes until the cheese is melted.
