Lasagna Soup

A hearty Italian sausage and marinara soup topped with a creamy ricotta-Parmesan mixture.
Ingredients
Meat & Seafood
- 1 (16-oz) package sweet Italian sausage, casings removed
Produce
- 1 onion, diced
- 1 Tbsp parsley
Dairy & Eggs
- 1 cup ricotta cheese
- 1 cup grated Parmesan cheese
Frozen
- 4 frozen garlic cubes
Pantry / Dry Goods
- 2 Tbsp tomato paste
- 1 (24-oz) jar marinara sauce
- 2 (32-oz) cartons chicken broth
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 (17.6-oz) package Italian Artisan Gigli Pasta
Instructions
- Heat a large soup pot over medium-high heat and add the sausage and onion. Break apart the meat and cook until the onion is translucent and the meat is cooked through.
- Add the marinara sauce, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil then add the pasta. Cook for about 10 minutes, until al dente.
- Meanwhile, combine the ricotta, Parmesan, and parsley in a small mixing bowl, stir until smooth.
- Serve the lasagna soup in a bowl and top with a scoop of the ricotta mixture.

Notes
- Any type of pasta works in this soup. You can even break apart lasagna noodles or bow ties. Use the Italian Artisan Gigli Pasta but any tender pasta of your choice.
