Cheesy Gordita Tacos

Crunchy taco shells wrapped in cheesy flour tortillas, filled with seasoned ground beef and topped with a spicy ranch dressing.
Ingredients
Meat & Seafood
- 1 lb ground beef
Produce
- 1 small onion, diced
- shredded lettuce
- diced tomatoes
- diced avocado
- lime juice
Dairy & Eggs
- 1 (12-oz) bag shredded Mexican cheese, divided
- 1/2 cup sour cream
Pantry / Dry Goods
- 1/2 tsp salt
- 1 (12-ct) bag mini flour tortillas
- 1 (12-ct) box crunchy corn taco shells
- 1 tsp Ranch Seasoning Blend
Sauces & Condiments
- 1/4 cup Spicy Taco Sauce
- 1 tsp hot sauce
Instructions
- Preheat the oven to 350°F.
- Heat a large skillet over medium-high heat and add the ground beef and onion. Break apart the meat and cook until the onion is translucent and the meat is cooked through. Drain the excess grease.
- Add the salt and taco sauce. Stir to combine and then remove from the heat.
- Place the flour tortillas on a baking sheet in a single layer. Sprinkle about 3 Tbsp of shredded cheese on each tortilla.
- Place the crunchy taco shells on another baking sheet in a single layer.
- Place both baking sheets in the oven for 3 minutes, until the cheese is melted and the crunchy tacos are crisp.
- Remove from the oven and carefully wrap the flour tortillas around the outside of the crunchy tacos while they're still hot. Stack the tacos in a row on one of the baking sheets.
- Fill each taco with the seasoned meat mixture and sprinkle with the remaining cheese.
- Bake for an additional 3 minutes, until the cheese is melted.
- In a small bowl, mix the sour cream, Ranch Seasoning Blend, and hot sauce to make a spicy ranch dressing.
- Top the tacos with lettuce, tomatoes, avocado, lime juice, and spicy ranch, if desired.

Notes
- The TJ's Spicy Taco Sauce isn't actually very spicy. Comparable to the mild sauce at Taco Bell.
