Gyros with Tzatziki

Instructions

  1. In a mixing bowl, combine the cucumber, tomatoes, red onion, olive oil, vinegar, salt, pepper, and dill. Mix well and store in the refrigerator until ready to use.
  2. Heat a large skillet over medium-high heat. Add the gyro slices and cook for 1-2 minutes per side, until browned and heated through. Transfer to a paper towel.
  3. Place the flatbread on a plate and cover with a damp paper towel. Heat in the microwave for about 30 seconds.
  4. Assemble the gyros by layering a few slices of meat onto the flatbread, then topping with the tzatziki and cucumber salad.
  5. Serve extra cucumber salad on the side.
