Tortellini and Spinach Soup

- 2 cups spinach, packed and chopped
Dairy & Eggs
- 2 (10-oz) packages tortellini
- Shredded Parmesan cheese (for topping)
Pantry / Dry Goods
- 1 (32-oz) carton chicken broth
Sauces & Condiments
- 1 (25-oz) jar vodka sauce
Instructions
- Add the vodka sauce and chicken broth to a pot. Heat the liquid over medium-high heat until it begins to simmer.
- Add the tortellini and cook until al dente, about 5 minutes.
- Stir in the spinach.
- Ladle the soup into bowls.
- Top with Parmesan, if desired.
